So I’d normally cook a Sunday roast but after our return from Forbidden Corner I was a bit tired, a bit pushed for time as the fireworks were due to go off and I realised I didn’t quite have all the ingredients I wanted. Instead I rustled up two Toad in the Holes, 1 traditional and a veggie one that I did with roasted squash and peppers that worked a treat. I used bread tin loaves to cook them in and they turned about really well. Lashings of gravy (veggie and beef) with some crispy roast potatoes and then a wander over to the rugby club for the bonfire display. Few Guiness to wash it all down with and a perfect end to a lovely Sunday. Cheers.
